Farmstead. Handcrafted. Small-Batch.

At Garda, we specialise in handcrafted soft cheeses made from the raw milk of our own herd.

Our range includes mozzarella, burrata, bocconcini, halloumi, and our much-loved traditional creamy feta, each produced in small batches using time-honoured cheesemaking methods.

Alongside our fresh cheeses, we continue to explore new expressions of our milk. From delicate fresh curds to our first cave-aged cheeses, every Garda cheese reflects a commitment to craftsmanship, quality, and the simple belief that exceptional milk deserves exceptional care.

Simple Philosophy

We craft our cheeses exclusively from the raw milk of our own herd of Italian Holstein-Friesian cows, raised on expansive coastal pastures and managed according to regenerative farming principles.

Using traditional methods and milk from a single herd, we transform each day’s milking into cheeses that reflect the character of our farm, our animals, and the landscape they call home.

Taste the Character of the Land

We work intentionally with raw milk because it carries the true character of the land.

The changing seasons, diverse coastal pastures, and natural rhythms of our herd all leave their mark on the milk, creating flavours that cannot be replicated or manufactured.

Rather than standardising these natural variations, we embrace them.
Using traditional methods and careful maturation, we allow each cheese to express the place from which it came — a reflection of pasture, season, and farm.

Made with patience. Crafted by hand. True to its origin.

Alive, Seasonal & Unique

Great cheese is a living thing.

It changes with the seasons, responds to the pasture, and reflects the natural rhythm of the farm.

Because we work with raw milk from our own herd, each batch carries its own subtle expression of place and time — shaped by the land, the animals, and the season in which it was made.

That is what makes our cheese alive, seasonal, and uniquely Garda.

Step Into the Cheesery

Join us on the farm for an intimate cheesemaking experience where you’ll step behind the scenes of a working farmstead cheesery.

Learn traditional techniques, work with fresh milk, and discover the craft behind our handcrafted cheeses before gathering around the table to enjoy the fruits of your labour.

Whether you’re a passionate food lover or simply curious about the journey from pasture to plate, it’s an opportunity to slow down, learn something new, and connect with the land, the animals, and the food they make possible.
